Pasta Salad With Creamy Ginger Dressing Recipe
Ingredients:
16 oz of precooked noodles (Shanghai); blanched and rinsed in cold water
1/16 tsp of sesame oil (for noodles)
8 oz of snow peas (fresh); blanched
225 g of shrimp (fresh); shelled and deveined
2 Tbsps of chopped coriander
2 Tbsps of minced scallions
1 Tbsp of oil
For the Shrimp Marinade:
1 tsp of salt
1/4 tsp of pepper (white)
1/2 tsp of Chinese wine (cooking)
For the Dressing:
3 Tbsps of grated ginger (fresh)
1 pc of garlic clove (small); crushed
1 pc of egg yolk (large)
1 tsp of egg white
2 tsps of juice (lemon)
2/3 c of oil (vegetable oil)
1-1/2 tsps of soy sauce
2-1/2 Tbsps of sesame oil
1 Tbsp of cream
Instructions:
Combine salt, white pepper, and cooking wine inside a bowl; mix them well then add the shrimp. Sprinkle sesame oil onto the pasta; toss them well then set on the side.
Heat the wok then add a tablespoon of oil; stir-fry the shrimp till pink or done. Set on the side.
Combine garlic, ginger, egg, and juice inside the blender; blend till mixed well. Gradually add vegetable oil while blending. Add cream and soy sauce; mix dressing thoroughly then set on the side.
Combine peas, noodles, and shrimp; toss them well. Add the dressing and garnish coriander and scallions. Serve.
