Oregon Hazelnut Bleu Cheese Salad Dressing Recipe
Ingredients:
1/4 c of buttermilk
2 pcs of eggs (large)
2 tsps of vinegar (white wine)
1 pc of garlic clove
1/2 tsp of salt
1/16 tsp of coarsely ground pepper (black)
1/16 tsp of cayenne
1-1/2 c of oil (olive oil)
1/4 c of crumbled cheese (Blue)
1/4 c of roasted hazelnuts (oregon); chopped
1/8 tsp of parsley; chopped
1/4 tsp of lemon zest; grated
Instructions:
Combine eggs, buttermilk, vinegar, salt, pepper, garlic, and cayenne inside the blender; blend till mixed well. Gradually add the oil, while blending constantly.
Once creamy and emulsified, reduce the speed into low then add the cheese, nuts, zest, and parsley; blend till mixed well. Transfer on a bowl and serve.
Use as dressing for fresh fruits or greens.
