La Rinforzata (Neapolitan Cauliflower Salad) Recipe
Ingredients:
2 pcs of cauliflower (small, 1.5- 2 lbs); trimmed and separate to flowerets
1 pc of small onion (red); sliced thinly
10 pcs of olives (black); chopped coarsely
10 pcs of olives (green, stuffed pimiento); sliced
3 pcs of gherkins (small); chopped
2 Tbsps of capers
8 pcs of anchovies
2/3 c of oil (olive oil)
1/3 c of vinegar (white wine)
Salt (to taste)
Pepper (freshly ground)
1 Tbsp of basil (dried)
2 Tbsps of basil (fresh); chopped
Instructions:
Blanch the flowerets of cauliflower; drain well. Place on a bowl then add onion, olives, capers, anchovies, and gherkins.
Combine vinegar and oil then season salt & pepper; pour onto salad then sprinkle basil. Toss them gently till well coated. Place inside the refrigerator till chilled; stir occasionally.
