La Jolla Salad Recipe
Ingredients:
Mixed green vegetables (bibb, boston, and romaine lettuce)
2 pcs of leaves (radicchio); filled with
2 oz of crabmeat (lump)
2 pcs of shrimp (large)
Papaya slices (fresh)
For the Vinaigrette:
1/4 c of mustard (dijon)
1/2 c of vinegar (red wine)
1/8 c of vinegar (white wine)
1 pc of egg yolk
3/4 c of oil (salad)
Juice from 1 pc of lime
3 oz of honey (pure)
1/4 tsp of tarragon (leaves)
1/4 tsp of whole basil (leaves)
1/4 tsp of oregano (leaves)
1/2 tsp of parsley (leaves)
1/2 pc of garlic clove; crushed
1/2 tsp of pepper (white)
1/2 tsp of salt (seasoned)
1 tsp of salt
1 Tbsp of dill weed (fresh); chopped
Food color
Instructions:
Arrange salad greens onto a platter together with the radicchio, filled with crabmeat. Garnish ed shrimp and slices of papaya. Pour over vinaigrette and place some onto a sauce bowl.
(For The Vinaigrette)
Combine vinegars, and mustard onto a glass bowl. Add yolk then whisk thoroughly then slowly add oil while constantly whisking.
Add honey and juice from lime; stir thoroughly. Add tarragon, oregano, basil, parsley, salts, pepper, dill, and garlic; whisk thoroughly and add food coloring, about one drop, if preferred.
