Indian Mayonnaise Dressing Recipe
Ingredients:
1 Tbsp of oil (ghee or corn oil)
1 pc of onion (small); chopped finely
2 tsps of curry (powder)
1/4 tsp of cayenne
1 pc of ginger root (1/2 inch); peeled and chopped
1 Tbsp of paste (tomato)
1 Tbsp of mango chutney
2/3 c of mayonnaise
3 Tbsps of half-and-half (or plain yogurt)
Slices of cucumber slices
Strips of cucumber peel
Sprigs of parsley (fresh)
Instructions:
Heat the oil on the saucepan then add curry, onion, ginger root, and cayenne. Cook slowly for 5 mins while stirring occasionally. Take out from the heat then let it cool.
Transfer the cooled mixture on the processor then add mayonnaise, paste, half-and-half, and chutney; process till smooth.
Transfer on a bowl and place inside the refrigerator, about one hour. Serve chilled and garnish slices of cucumber, strips of cucumber peel, and sprig of parsley.
