Curried Macaroni & Herring Salad Recipe
Ingredients:
1 pc of cucumber (small); peeled and halved lengthwise
1/8 tsp of salt
1/2 c of uncooked pasta (elbow macaroni)
1 pc of herring (pickled or matjes)
2 pcs of mushrooms (raw); sliced thinly
2 Tbsps of vinegar (white)
1 Tbsp of oil (olive oil)
1 tsp of salt
1/8 tsp of pepper (white)
For the Dressing:
1/2 c of mayonnaise
1 c of sour cream (dairy)
2-1/2 tsps of curry (powder)
Instructions:
Scrape cucumber seeds out then discard them. Cut cucumber into half inch cubes and place on a bowl; sprinkle salt then let it stand for 15 mins. Drain then pat dry using paper towel.
Cook pasta as stated in its package instructions; drain well. Rinse herring with (cold) water then pat dry; cut to 1-1/2 inch lengths then place on a (salad) bowl.
Add cucumber, freshly cooked pasta, and mushroom slices. Combine vinegar, salt, pepper, and oil on another bowl; whisk thoroughly then pour onto the pasta with vegetables.
Toss salad gently and place inside the refrigerator for 1-2 hours. Combine mayonnaise, curry, and (sour) cream; beat them well then add onto the chilled salad. Serve.
