Beet & Cucumber Salad with Orange Dressing Recipe
Ingredients:
2/3 c of veggie oil
1/2 tsp of salt
2 tsps of grated orange rind
2 tsps of dijon mustard
1 Tbsp of honey
1 Tbsp juice of lemon
3 Tbsps juice of orange
8 ounces of fresh beet
1 cucumber (European)
A head of romaine-lettuce
A head of leafy-lettuce
Instructions:
Separate leafy lettuce head onto individual pieces. Wash them then dry w/ paper towels. You gather together one-half of leaves the cut them crosswise onto 1″-wide strips. Do the same for romaine-lettuce.
Arrange romaine & whole lettuce alternately around inside edges of large bowl. You fill its center w/ shredded romaine & lettuce. Cover w/ dampened paper towel. Place inside your fridge ’til serving time.
Srcub & cut cucumbers lenghtwise into half then crosswise onto thin half moons. Place them in plastic-bag then refrigerate.
You mix salt, rind, mustard, honey & juices in bowl, whisking oil in ’til blended well. Refrigerate ’til serving time.
Pour one-half dressing all over strips of lettuce, tossing well to evenly coat. You arrange the cucumbers neatly at plate’s center then arrange beet & cucumber around your cucumber then serve w/ remainder of dressing.
