Beets & Onions Vinaigrette Recipe
Ingredients:
A bunch of watercress
1/2 c of eden olive-oil
1/4 c of eden brown-rice vinegar
2 Tbsps of eden vinegar (plum)
2 onions (medium); thinly sliced
2 c of water
3 beets (medium)
Instructions:
Have beets boiled in heated water about 60 mins ’til tender. Thoroughly drain then cool. Slice onions thinly into crescents. Have water boiled then cook slices of onion for 60 secs. Transfer into serving bowl.
You combine oil & vinegar then add onions, marinate. Peel the beets, slipping skin off then rinse them under running water.
You slice your beets then add them into onions. Gently tossing then set it aside for half an hour. Serve them on top of your watercress.
