Basted Duck With Oyster Dressing Recipe
Ingredients:
1/8 tsp of thyme
1/4 tsp of paprika
1/4 c juice of lemon
1/4 c of butter
1 c of oysters; drained & chopped
1 qt of bread-stuffing mix
1/4 tsp of pepper
1 tsp of salt
Instructions:
Have duck’s cavity seasoned w/ pepper & salt. Add the oysters into stuffing mix, adding some of oyster liquid. Stuff the duck lighty.
Pour remaining mixture into another pan. Combine thyme, paprika, juice & butter. Have duck baked in roaster w/ cover at 325 degrees F for 2 & 1/2 hrs, basting often w/ lemon-mixture. Baste the dressing w/ duck-drippings.
Remove the cover few minutes before cooking is done.
