Asparagus With Apple Vinaigrette Recipe
Ingredients:
1 & 1/2 lbs of cooked asparagus
Pepper
Salt
1/2 c of veggie oil
1 & 1/2 tsps of brandy
1 Tbsp juice of lemon
1 tsp of mustard (Dijon)
1/2 c of clove garlic; peeled & minced
1 Tbsp of honey
Instructions:
Simmer apples w/ honey & water in saucepan set over mid-heat ’til tender. Allow to cool then remove them from pan. Transfer them into processor then puree.
You add brandy, juice of lemon, garlic & vinegar into cooked appples then blend about 60 secs, adding oil gradually ’til smoothened. Season w/ pepper & salt.
Steam your asparagus ’til tender then transfer into serving platters then cover w/ vinaigrette.
