Asparagus Salad With Blue Cheese Dressing Recipe
Ingredients:
28 pcs of asparagus (spears); trimmed
1/2 c of yogurt (nonfat)
1 Tbsp of crumbled cheese (Blue)
1/4 c of juice (lemon)
1 Tbsp of chives
1 pc of garlic clove; peeled and chopped finely
2 pcs of tomatoes (fresh);cored and cut to wedges
Salt & Pepper (to taste)
1/2 c of fennel
Instructions:
Boil water on the base of steamer and fit a basket into it. Steam asparagus above medium-high heat, about six mins till tender. Take out from heat then let it cool on the side.
Combine cheese and yogurt inside a saucepan above gentle heat; warm for 1-2 mins while constantly whisking till cheese melts.
Take out from heat then add chives, garlic, and juice ; whisk thoroughly. Arrange asparagus on the middle of the plate then arrange wedges of tomato around.
Drizzle drizzle above asparagus then sprinkle salt & pepper. Garnish fennel and serve.
