Ancho Vinaigrette Recipe
Ingredients:
2 pcs of peppers (Ancho)
5 pcs of tomatoes (sun dried)
1 c of vinegar (rice wine)
1/2 c of oil (salad)
2 c of water
2 Tbsps of sugar (refined)
2 Tbsps of soy sauce
Instructions:
Boil tomatoes and peppers inside a saucepan above moderately high heat till tender and the water has reduced into half.
Take out from the heat then let it cool on the side. Drain tomatoes and peppers, save the liquid.
Place the tomato/pepper mixture inside a processor; process till pureed then transfer the puree on a medium-sized bowl. Add vinegar, oil, sugar, and soy; whisk thoroughly. Serve dressing on green salad.
